MAKING NEW EASTER TRADITIONS WITH BBQ PULLED JACKFRUIT TACOS

This Easter undoubtedly feels a little strange. It’s the long weekend and normally the roads are bumper to bumper with 4wd and caravans, the beaches and parks are bustling with picnickers, and there’s a contagious excitable energy in the air as we all mill together to be with our loved ones, eat too much chocolate and bring the spirit of Easter to life for our kids. Instead of looking at what we are missing from the ‘norm’ though, I think it’s a great opportunity to pull the positives from something different. Easter is at home this year and there’s lots of ways that we can make that equally enjoyable for our families and kids. There’s still opportunity for an epic Easter egg hunt, novelty games, movie night, charades, crafting, dress-ups, cooking and sharing delicious food, and you might even make up a new family Easter tradition!

On the topic of food, if you’re after a delicious meat-free meal all of the family will enjoy, I highly suggest giving my BBQ Pulled Jackfruit Tacos a go! Jackfruit is a tropical fruit, native to Asia that resembles pulled pork when shredded. The best thing about it is its ability to take on almost any flavour, making it a popular meat-alternative for Vegans. Nothing says family night more than Tacos and I promise these BBQ Pulled Jackfruit Tacos will be a winner! For this recipe you will need the tinned young jackfruits which can be purchased at most supermarkets (in the health food aisle normally) or health food stores. Ceres Organics is the brand I like to use.

They are super simple to make and if you have a look at the ingredients list, it is mostly the combination of spices that makes the recipe mouthwateringly good, and the prep time minimal! A shake of this, a shake of that - just my kind of recipe:) This big batch will easily fill the tacos of a family of 4.

BBQ PULLED JACKFRUIT TACOS

Ingredients

  • 1 Tbsp Coconut Oil

  • 4 tins young Jackfruit, drained, rinsed and paper toweled dry

  • 1 red onion finely diced

  • 1 tsp Garlic Powder

  • 1 tsp Ground Cumin

  • 1 tsp smoked Paprika

  • 1 tsp Ground Coriander

  • 1 tsp Ground Turmeric

  • ½ tsp Garam Masala

  • Cayenne pepper (Optional Spicy Extra - Warning, not for the mild taste buds!)

  • Cracked black pepper (to desired taste - I like to be liberal!)

  • ¼ cup tomato ketchup

  • 3/4 cup vegetable broth (beautiful flavour to simmer ingredients in) OR just gradually add a little filtered water

  • 1 Tbsp Tamari

  • 1 Tbsp Teriyaki or BBQ Coconut Aminos (if you aren’t able to get this, an alternative is to use Soy Sauce with a little honey dissolved into it for that caramelised taste).

Method

  1. Shred drained jackfruit with a fork, like you would pulled chicken or pork. Place in a large mixing bowl and set aside.

  2. In a large frying pan, heat coconut oil and add diced onion and a drizzle of both tamari and Teriyaki Coconut Aminos. Saute for 2-3 minutes, or until softened and caramelised before adding tomato ketchup and spices.

  3. Stir ketchup and spices through to combine flavours for 3-5 minutes, continuing to add broth or a little filtered water to keep mixture moist as it thickens.

  4. Remove from heat and add to shredded jackfruit. Stir thoroughly to combine flavours. Optional: Cover and place in the fridge for a couple of hours to allow jackfruit to really soak up the marinade flavours.

  5. Spread jackfruit mix across a lined baking tray before placing in the oven for 20 minutes or until crispy and browned

Method

  1. Begin by laying tacos out on a plate.

  2. Spread chosen condiments across the base of the taco before adding pulled jackfruit and desired fillings. The key to a good taco wrap is not overfilling!

  3. Squeeze a little lime juice over the top before wrapping it up and devouring!
