Cauliflower Pizza: The full taste experience, minus the calorie density

I LOVE Pizza! In fact, I love most Italian cuisine that unfortunately, tends to fall into the ‘occasional’ category of high calorie foods. That’s why discovering cauliflower pizza felt too good to be true. Tastes like pizza, is easy to make, doesn’t cost a fortune in ingredients I’ll never use again and keeps well for leftovers? Say Whattt?! I had to give it a go and I was SO impressed with the outcome that I decided to share the love with you all :)

Needless to say, I think Cauliflower Pizzas have earnt themselves a place on the week night dinner menu hall of fame, much like Taco Tuesdays…catchy name still to come, suggestions welcome:)

CAULIFLOWER PIZZAS

BASE INGREDIENTS

  • 1 medium sized head of cauliflower

  • 2 eggs

  • 1/2 cup mozzarella cheese

  • 2 Tbsp Nutritional Yeast Flakes OR substitute with parmesan cheese

  • 1 clove garlic crushed

  • 1 Tbsp Italian Dried Herbs

  • Cracked pepper and good quality salt to season (I used Celtic Salt)

METHOD

  1.  Pre-heat oven to 200 degrees Celsius.

  2. Chop Cauliflower into small florets before placing into a food processor and processing to a cauliflower rice consistency

  3. Saute cauliflower rice in a wok or pan for 3-4 minutes, adding pepper, garlic, and salt.

  4. Remove from the pan once softened.

  5. Layer paper towel over a large tray and spread cauliflower rice over the top, allowing any moisture to soak up. Pat excess moisture away with paper towel. Alternatively you can place the rice in a nut milk bag and squeeze the moisture out. You want as much of the water out of the rice as possible to create a beautiful crispy base in the oven.

  6. Once you have completed this process, add cauliflower rice to a large mixing bowl with eggs, cheese, extra herbs, salt and pepper as desired. Mix in thoroughly.

  7. Place baking paper over a large baking tray or pizza stone (a pizza stone makes for a really nice crispy base). Spoon mixture onto baking paper into a medium-large, even sized circle.

  8. Place in the oven for 25-30 minutes or until golden and crisped to your liking.

  9. Remove from the oven and add desired toppings before returning to the oven for 5-10 minutes.

TOPPING SUGGESTIONS

  1. HAWAIIAN

    Ham/Bacon, Pineapple, Cheese, tomato or Bbq Sauce

  2. FIG AND HALOUMI

    Lightly saute diced red onion in a little tamari and Teriyaki sauce. Set aside. Saute small squares of haloumi until lightly golden. Set aside. Spread Bbq sauce across base before adding thin slices of fresh figs. Add haloumi, onions and cheese (in that order) evenly across base before returning to the oven.

  3. BACON, RED ONION, TOMATO, ROSEMARY AND CHEESE (PICTURED ABOVE)

    Dice and saute red onion and bacon in a little coconut oil, tamari and bbq sauce for 5-10 minutes. Add tomatoes in at the 5 minute mark. Spread spicy tomato chutney and Bbq sauce over base before evenly spooning bacon, onion and tomato mix across pizza base. Sprinkle rosemary and mozzarella cheese over the top before placing back into the oven.

  4. MARGARITA

    Spread base with marinara sauce. Add Cherry tomatoes (halved), fresh basil leaves, and mozzarella cheese. Add chilli flakes as an optional spicy extra. Place in oven until tomatoes are blistered.
